Costa Rica La Flor de La Pastora
We fell in love with the pre-ship sample of this this floral, jammy, dark chocolaty stunner earlier this year and are so excited to finally offer this special coffee.
Finca La Pastora is located in Santa Maria de Dota region of Tarrazu. The farm has been in the same family for over 60 years. The owner Minor Esquival Picado, has divided the farm into 3 separate farms, 2 for his daughters and La Pastora, where he has built his micro mill.
Minor is fanatical about ripeness of fruit for his coffee. Only picking the Sangre de Toro(Bulls blood) colored cherries. The fruit is then transported to his micro mill Beneficio La Pastora and the fruit is run through a water channel separating floaters and any debris. After the cherries have been sorted via water they are put into 55 gallon tanks with airlocks. Once the drums are sealed they remain in cool space for 4 days allowing for microbial action and CO2 off-gassing. Once the tanks off-gassing
slows down, the fruit is removed from the barrels and is depulped, washed and sundried on raised beds. He has been working on this process the last 3 harvests and this year is by far the best and most complex.
