Colombia Sheila Rios Intrinsic Cherry
This intrinsic cherry process coffee was a major standout for us when cupping several Creativa Coffee District coffees from our friends at Equation Coffee. To say this coffee is exploding with dark chocolate/cacao nib and port wine flavors and aromas is an understatement.
Sheila Rios, 52 years, has been running her farm together with her husband, Osvlado, for the past eight years. It was given to her as a part of her inheritance, and it has been in her family for three generations. The property is two hectares total, with 1.5 dedicated to coffee cultivation. There are 1,200 Catuai and Typica coffee trees that grow slowly, beneath a heavy canopy of shade-giving trees.
Coffee cultivation is a part of her heart and soul, as she grew up on the farm, and of everything life has to offer, caring for her crops is what she finds most beautiful. She employs 16 people, eight for maintenance and eight for the harvest season.
Sheila most identifies her operation with the color green, symbolizing hope – which is something that she says she never lacks.
Intrinsic Cherry Process
Cherries are fermented in the very same bags they come in. It is in this way the process maintains the essence of each micro-lot. The bacteria and yeast strains are unique and vary in each batch, and by involving them in the fermentation, the essence of the cherry shines. The fermentation environment is then opened to the air and allows nature to guide the temperature – which averages at 30° celcius. Temperatures are kept below 45° celsius, to prevent the cherries from overheating. Fermentation times are between 12 and 72 hours, because the soaring temperatures of the natural environment result in drastic changes of the cherry cell structure, and rapid embryo death, completely changing the cup profile.
