Ethiopia is one of those special origins that often sparks an eye opening experience for so many coffee drinkers. Most of us at Archetype have a definitive moment that involves that floral, bergamot laced, classic Ethi thing blowing our minds early on in our coffee journeys. We've had a hard time finding those coffees in the last few years, but this washed Buku is giving us all the Ethi feels, and is ticking all the boxes in the best way! The lemon-lime soda vibe of gin & tonic, with the fruity pebbles notes of bergamot, and rounded out with the tangy stone fruit of apricot.
Some notes from the importer:
"Isayas Beriso is the owner/farmer of Buku Sayisa washing station. He has his own farm, but also sources coffee from the Buku Sayisa valley to be processed there.
The coffee is harvested at peak ripeness, hand sorted, then depulped.
Wet fermented for up to 72 hours, washed in channels, and graded by density. Soaked for two hours after fermentation. Dried for ten days in two centimeter layers on raised beds, and hand sorted one final time."
