As the coffee price continued to decline in 2016 and his father fell seriously ill, he decided to move back to the farm with his brothers and take on the new challenge. In the beginning the coffees weren't scoring great even with unique coffee processing techniques. Stepping back, he began to take a look at their soil composition. Through this process he was able to find the missing nutrients and began replenishing them in order to make his trees healthy once again.
Wilder's background in genetics and desire to learn more about coffee led him to begin a varietal program in Tocora, which has since grown to include more than twelve different coffee varieties from various origins. This Gesha is one of them.
Cherries are hand selected that have a minimum of 20 days maturation or are above at least 20 Brix. Next the cherries are floated to remove any defective or low density cherries. They are then fermented whole in 200 liter tanks for 7 days, submerged in a mix of Gesha and SL-28 mosto. They continue to ferment monitoring the pH, ensuring it does not drop below 4.5 for a total of 12 days. Next the cherries are washed and moved to raised beds for an average of 25 days of drying. In order to stabilize the cherries, they are stored in GrainPro bags for up to 1 month before dry milling.
This Gesha is super floral, loaded with bergamot candy, dried fruit, red grape, and sweet milk chocolate.
