When we first tasted this Sidra we instantly knew that we wanted to offer this exceptional coffee during the Holiday season. The unmatched sweetness and clarity of this coffee is on another level. For this lot, cherries are picked at peak brix count, then exposed to 45-hour aerobic fermentation. This method highlights the intrinsic flavors of the Sidra, resulting in a cup with intense sweetness, complexity, and a deep connection to its origin. Afterwards, cherries are spread out on raised beds and carefully monitored and turned regularly to ensure uniform drying and to prevent over-fermentation or mold.
The drying process can take between 8 to 12 days, during which sugars and flavors from the fruit slowly permeate the seed. This creates a unique profile characterized by intense fruitiness, sweetness, and silky body. They aim for a moisture content of 9.5-11%. Their greenhouse maintains a temperature range of 20-38 C, helping them achieve a consistent drying time for their coffee.
